Такое тесто идеально подходит для пирогов – тартинки из него слегка хрустящие, в меру сладкие и довольно прочные, так что можно не волноваться за то, что готовый пирог треснет или развалится. Само тесто довольно пластичное, но вместе с тем нежное – за счет сахара оно не слишком прочное, легко рвется, и многие не любят с ним работать, так как не всегда удается аккуратно перенести его в форму. Главный секрет: не месить тесто слишком долго, чтобы масло не растаяло и тесто не стало слишком мягким.

Положите в миску муку, сахар, масло и хорошо измельчите. Удобнее всего использовать для этого кухонный комбайн, но можно также хорошо порубить смесь ножами или перетереть руками. Важно, чтобы смесь осталась холодной, если же она успела нагреться - поставьте ее в холодильник на 20 минут. У вас должна получиться мелкая крошка. |

В холодной крошке сделайте углубление и влейте туда яйцо и жидкость, замесите тесто, собирая крошки от края к середине. Готовое тесто - пластичное, слегка липкое, не рассыпающееся (если тесто крошится, не месите, а просто добавьте еще ложку жидкости). Если вы замешиваете тесто в комбайне, остановите процесс, как только тесто слипнется в комок. |

Готовое тесто обваляйте в муке и раскатайте на припудренном мукой столе. При раскатке подсыпайте муку и регулярно переворачивайте пласт. Хорошая толщина - 1-3 мм. |
